King Kampachi, pound for pound, are known to sports fishermen worldwide as one of the hardest fighters in the ocean. Small wonder that local fishermen in the Gulf of California nicknamed it El Pez Fuerte: the strong fish. US anglers know this fish as the Alamo Jack. It can be easily identified by its characteristic dark, diagonal stripe through the eyes to the nape.

Seriola rivoliana are member of the Carangidae family and can be found in the western Atlantic, Pacific, and Indian Ocean. They are usually found singly or in small groups, occasionally in proximity to the coast, but more often some distance from shore. The Almaco jack is a roving predator of small fishes but also feeds on invertebrates.

King Kampachi is a delicious, sashimi-quality marine fish. It has a clean, crisp bite and a rich, buttery flavor. It is extremely versatile: as sushi it is unsurpassed; and is equally delicious grilled, baked, sautéed, poached, smoked, or however you like to prepare it. It is full of high-quality proteins and heart-healthy Omega-3s. King Kampachi have no detectable mercury or PCBs, and are one of the purest, healthiest foods that you can eat.

Environmental stewardship has been Co-founder Neil Sims dialogue thru his entire career as a leader in aquaculture. King Kampachi farming starts with local brood stock eggs that are raise in a state-of-the-art hatchery. Once the larvae have developed into juveniles, they are transferred to submersible offshore pens in the clear waters of the Gulf of California. These waters are their natural environment, and where they thrive until harvested in nine to twelve months. The pens are located in deep water with strong currents, and are regularly tested to confirm that the operations have no discernible impact on water or benthic quality. King Kampachi’s research teams in Kona, Hawaii and La Paz, Baja California Sur work to continually improve their processes affecting fish welfare. The goal is to ensure that King Kampachi’s operations are among the most environmentally sound in the world.
