Executive Chef / Partner Tyler Skrivanek of Duo Restaurant Tyler spends countless hours as Chef of Duo Restaurant in the Highlands since December 2005. He cultivates farm-to-table cuisine by building relationships with local purveyors with similar values.   Chef Tyler’s experience is rooted in his upbringings on Nebraska farmland.  He remains grounded and humble with a working knowledge of food cycles, seasonality, and a commitment to sustainability. Red Trout Fillet

Colorado Cornmeal Crusted Red Trout: Sweet Potato golden raisin caponata, Pepitas, Roasted Cabbage, and saffron caper beurre blanc






Seafood Chowder: Hickory Wood Smoked Rockfish, Chopped Clams, Pancetta, and jalapeno powder







Duo of Lamb: Local Boulder grilled t-Bone and sherry Glazed Riblets with lemon sunchoke emulsion, roasted local baby carrots and caper shallot relish







“I work with Northeast Seafood because of the high-quality products they offer and the professionalism I receive from my Rep.  I love that they push sustainability, too!” Duo opened in 2005 and is a neighborhood restaurant with a comfortable and warm atmosphere.  The cuisine is Contemporary America with a Farm to Table commitment apparent in every bite.  The menu changes seasonally with 2 or 3 seafood options available year-round, as well as weekend seafood specials.
