The Holiday Season is upon us and the end of the year is near!  This seafood market report will help to prepare you for this winter’s seafood availability, as well as provide holiday ideas that will surely impress your guests.

Florida Stone Crab will continue thru the New Year, offering a sustainable domestic fishery. Order your stone crab in advance!

Red King Crab prices continue to trend upward. For those looking for an affordable and domestic alternative, ask about our Alaskan Golden King Crab.

Live Lobster prices are expected to hold thru December, but frozen cooked Claw & Knuckle Meat prices, and frozen cooked Lobster Tails both warm and cold-water continue to rise.

Raw Lobster Tail Meat is an innovative new product that utilizes a high-pressure machine to shuck whole lobster into a 100% usable meat.  The raw frozen lobster product will not only decrease kitchen prep-time, but is also cheaper than the comparable cooked product. Domestic fresh scallop prices have remained very reasonable since the opening of new fishing areas in 2019.  The 2020 quota will be set in March, prices traditionally will rise towards the month as Captains run out of days at sea.

Fremantle Octopus is the best octopus in the world.  Harvested from sustainable fisheries of the coast of Fremantle, Australia.  This Australian species (tetricus) is different than the common (vulgaris) octopus known to Spain.  This premium octopus is sold 3-5ct tentacles only, packed in a 2.2 pound(1kg) package.

Commodities Salmon prices have increased from Chile, Canada, and Scotland.  For a slightly higher cost per pound, we feel its worth it to go with a brand-named farmed salmon.  If the farm is branded, they are proud of their products and will stand behind the name.  We’ve got excellent farms to choose from: 60 South, Verlasso, Sterling, Ora King Salmon, and Creative King Salmon.  Give one of our brand names a try and make sure to mention it on your menu so your customers are informed and aware that your care about the source of your seafood.

The Hawaiian fish market can be unpredictable but we are getting offers of Mongchong (sickle pomfret), Onaga (long-tail red snapper), Hapu’upu’u (grouper), Opakapaka (pink snapper), Ehu (grey snapper), in addition to our regular offerings of Bigeye Tuna, Yellowfin Tuna, Albacore Tuna, Opah, and Ono.  If you are interested in specific Hawaiian fish, please let us know.

Northern Pacific waters from Washington to Alaska supply us with wild Black Cod/Sablefish, Alaskan True Cod, Rockfish, Dover Sole, and Patrale sole.  These fisherman combat winter winds and freezing air that leads to life and death decisions about continuing to fish or head for port.  Bad weather is a common occurrence in the winter and can stop boats from leaving port, trucks from leaving docs, planes from flying, and everything in-between.  Please be patient if your seafood is temporarily unavailable do to winter weather this season and we will work diligently to find you a great substitute.

Escargot is available both frozen in-shell and marinated meat in oil.  This popular French cuisine is sure to step-up the level of sophistication on your menu this holiday season

Oysters are in huge demand during the holidays.  We recommend being flexible and rolling with the punches if the brand name you want is unavailable.  We will have at least 50 varieties of oysters to choose from at any given time – they are all terrific!

Venus Clams, Manilla Clams, Littleneck Clams, Topneck Clams, Cherrystone Clams, Cortez Clams, Chopped Clams, Razor Clams, Steamer Clams, and Jumbo Clams Strips are all on the menu.

Bang Island Mussel, Salt Spring Mussels, PEI Mussels and wild Maine Mussels are all on the menu.
