After graduating from Cookstreet School of Fine Cooking in 2007 Chef Jason Gerk started his career in the pantry of The Mediterranean in Boulder Colorado. Within one year he worked his way up to junior sous chef and learned to run a professional and efficient kitchen.  After working at The Mediterranean for over three years, Chef Jason moved to a smaller restaurant with more versatility in local ingredients, Table 6.  At Table 6 in Denver Chef Jason was under the supervision of Chef Scott Parker.  It was here where he learned his knife skills by breaking down half a cow, local pig, poultry, and fish.

After three years working at Table 6 Chef Jason was contacted by Rob and Kelly Kukura who were opening a Bistro in Lafayette that also featured Sushi.  95a Bistro & Sushi was Chef Jason’s next adventure, working every station in the Bistro kitchen before moving onto Sushi. His mentor Chef Dennis Vihn made sushi interesting and fun which led to a quick progression in sushi skills. Chef Dennis showed Chef Jason the importance in using the highest quality fish, and are proud partners with Northeast Seafood. 

Northeast Seafoods provides the restaurant with large variety of seafood that inspires Chef Jason to create two new sushi specials every two weeks.  The menu changes with the seasonal ingredients available, and Chef Jason makes sure to keep customer favorites like the White Dragon Roll and Maguro Crudo:

  The White Dragon Roll is filled with tempura asparagus, cucumbers, and cream cheese, topped with Colorado Striped Bass and Avocado, and is finished with a spicy lemon Aioli. These ingredients highlight the subtle flavor of the Colorado striped bass.

Our Maguro Crudo is accompanied with a papaya gazpacho, pickled jicama, mint and olive oil. This is a simple dish that highlights the quality of our tuna. Please come by and give us a try.

95a Bistro & Sushi was established by Rob and Kelly Kukura in 2011. Both Rob and Kelly have been lifelong restaurateurs having previous grown the Mediterranean Restaurant in Boulder for 18 years prior to opening 95a.

The Kukura’s set out to create a restaurant that would serve as a great eatery as well as a neighborhood gathering place where folks from all walks of life would feel welcome. To do this they brought a family-like approach to 95a’s operations; enlisting their two sons and a host of colleagues from their years in the restaurant business. Care and concern for all guests is the number one priority at 95a. Beyond that; fun and personality epitomizes the atmosphere at 95a.

95a menu has a little something for everyone. The entrees draw from traditional American Cuisine with Latin, Asian, and Mediterranean influences. Additionally, 95a has an extensive list of over 28 tapas and small plates. As if all this were not enough; Chef Jason features a full sushi menu.
